Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 lb beef sirloin, thinly sliced
  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 large pineapple, peeled, cored, and sliced
  • 3 bell peppers (assorted colors), thinly sliced
  • 1 large red onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons fajita seasoning
  • Juice of 2 limes
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Flour tortillas
  • Fresh cilantro and lime wedges for garnish


Instructions:

  1. Marinate the Proteins:
  • In separate bowls, marinate shrimp, beef, and chicken with fajita seasoning, minced garlic, lime juice, olive oil, salt, and pepper. Let them marinate for at least 30 minutes.
  1. Grill or Sauté Proteins:
  • Heat a grill or a large skillet over medium-high heat.
  • Cook each protein separately until fully cooked. Remove and set aside.
  1. Sauté Pineapple:
  • In the same skillet, sauté pineapple slices until they are golden brown and caramelized. Remove and set aside.
  1. Sauté Veggies:
  • In the same skillet, sauté sliced bell peppers and red onion until they are tender and slightly caramelized.
  1. Assemble Fajitas:
  • Warm flour tortillas.
  • Layer each tortilla with a mix of cooked shrimp, beef, and chicken.
  • Add sautéed veggies and caramelized pineapple on top.
  1. Garnish and Serve:
  • Garnish with fresh cilantro and serve with lime wedges on the side.
